Max's Crispy Parmesan Wedges

  • 250g Maris piper potatoes
  • 2 tsp Maxi’s All Purpose Seasoning
  • 1 tsp olive oil
  • 15g grated parmesan
  • Salt
  • Black pepper

  1. Wash your potatoes, then cut them in half. Cut them in half 1-2 times more until you have even sized wedges.
  2. Place into a saucepan with boiling water, 2 tsp salt, 1 tsp baking soda and boil on a low heat for 5-6 minutes.
  3. Drain fully and then allow to steam dry in a colander for 5 minutes. They should go white and flaky on the outside.
  4. Place into your air fryer basket, drizzle with oil and Maxi’s All Purpose Seasoning, or any seasoning you like. Shake until fully coated. Cook at 180 degrees celcius for 20 minutes, shaking every 6-7 minutes to ensure they cook evenly.
  5. Cover with grated parmesan and cook for a further 5 minutes. Then serve up and enjoy!
